I teach a workshop titled Healthy Choices for Children.  It’s a class for parents seeking solutions to how to improve the way they eat. It’s about the alternative food market, organics, and the top ten food additives to avoid and why, menu planning and more.  It’s a 3 session fabulously informative interactive class.

Below is my absolutely favorite prop.

People are always astounded when I share this.

I have used this as show and tell for a very long time.

This is a hamburger from McDonalds that I purchased in 1996.

That was 12 years ago.

Note that it looks exactly like it did the very day I bought it.

The flecks on the burger are crumbs from the bun.

The burger is starting to crumble a bit.

It has the oddest smell.

The paper and bag in the backround is circa 2008 – to add decor to the photo. My friend Robyn’s idea.

This is the retro welch’s grape juice plastic container I have always kept it in. People always ask me -what did you do to preserve it ?

Nothing – it preserved itself.

Ladies, Gentleman, and children alike – this is a chemical food. There is absolutely no nutrition here.

Not one ounce of food value.  Or at least value for why we are eating in the first place.

The burger on the right, off the paper is a 2008 burger.  I had to buy it to get the groovy paper and bag.

The meat is a tad darker, the bun a little less golden but in 12 years it will look exactly like that too.

Do you find this horrifying?

McDonalds fills an empty space in your belly. It does nothing to nourish the cell, it is not a nutritious food.

It is not a treat.

I marvel at how McDonalds has infiltrated our entire world. A hamburger here tastes exactly the same in China or some around the world place.

It’s cloned.

Makes you wonder doesn’t it?

Tricks To Help Kids Eat Vegetables

My lovely teenage daughter said she didn’t really appreciate the fresh parsley in the cous-cous I made.

While my daughter has come far in the picky eating category, I found myself resorting to an old parent tactic that worked when she was little.

I told her to give me four bites.  We both smirked and she quickly chowed down four little bites.

I must have forgotten how clever she is.

Tactical parents need to be very specific.

I could have said give me four gargantuan bites, and I also could have drawn a line down the middle and said eat half.

I haven’t been in creative parenting picky eater mode for awhile now

The above technique playfully encourages a picky child to eat.

When my son was in pre-school they often hosted parent education workshops.

One educator, who was a hoot of a lady, taught us all kinds of tricks.

Years later when educating parents about the alternative food market,  I incorporated her tips with my tried and true experiences to share with parents who were searching for ways to feed their families well

First of all, if you are parent who does not eat or incorporate whole fresh foods into your diet, then perhaps you might wonder where the example for your child might come from.

It really begins with you.

A carrot might be oooky rabbit food, and sure it might come out of the ground long, orange and perhaps even need to be peeled, but you can shift the image of a healthy food for a child’s eye by making it fun and offering them carrot peels, shreds, rounds, diagonals, sticks, juliennes, or even blocks of carrots.

Same thing with zucchini!

We got far with the fact that broccoli looked like trees and how fun it was to eat the tops of the trees off. When that stopped working we got savvy with yogurt based dips and trees turned into something to dip instead

Broccoli chopped makes great green sprinkles on just about anything. What other veggies make great sprinkles?

Calling them sprinkles changes the tone – would you agree??

It’s all the same food with just a bit of a creative twist

Celery smiles, celery sticks, celery shredds, grated celery…

See a pattern here??

A cracker, toast point or rice cake with cream cheese on it becomes a palette for faces made up of just about any veggie or fruit you have, carrot shreddies for hair, half zucchini moons for eyelids,  sunflower seeds or raisins for eyes – better yet – spread out the goodies and let them make their own faces

During a particular we don’t do veggies phase I went as far as taking a bunch of  steamed veggies pureeing them in the blender with cottage cheese and parmesan cheese.

Kids adore this on crackers, it was loaded with veggies and yet what they knew is mom let them play with it and spread it on things on their own

Want to make peanut butter crunchy ? Add shredded carrots.  Carrots are sweet.

My kids went through a ”we don’t do green” phase.  Have you ever had that experience?

Instead of taking on the please eat something green game … I asked OK what colors do we eat this week? I let them pick three colors and if they skipped green that week, fine by me.

At lunch time we would decide which three vegetables we’d eat that day. I’d ask my kids, should that yellow pepper be in circles, smiles or lines… they got to choose.

Each layer of participating had them own their part of the meal and enjoyment

I’d make extra for snacks and keep them on the fridge for grazing

Before dinner I would say nothing and put out a bunch of raw veggies while cooking, my kids would sneak in and eat them, come back and sneak some more.  Did I care if they ate their veggies at dinner if they grazed before?

I was lucky that my kids adored soups and spaghetti sauce – I could blend any sauce with all kinds of steamed veggies and they never knew

Kids make funny decisions.  One vegetable made my son burpy, later he’d tell me – that taste comes back in my mouth - I didn’t like that, mommy

Good to know !

When they tell you it’s even better, but when they can’t tell you ? Is that their fault?

During these particular green is ooky times or other phases my child would go in and out of times, I was exceedingly grateful for a good chewable vitamin. I knew that if I didn’t strategically win that food battle that day, I at least had nutritional insurance.

Today BOTH of my kids really enjoy their vegetables. I believe it’s because of a life long habit we created together as a family.

Please Help Pediatric Allergist Dr. Doris Rapp

Perhaps you recall that I am going to be featured in Pediatric Allergist Dr.Doris Rapp’s newest book. I admire her work tremendously. Dr. Rapp has had a profound health impact on thousands of children who suffer from allergies, and yet if you read below she feels frustrated.

The following is a letter from pediatric allergist, Dr. Doris Rapp M.D.

Dear Friends,

I wonder if you would be willing to help me. Together we might be able to help tens of thousands of children. Alone I seem to do able to do very little.

We Need To Get The Following Information To Our Schools:

Dear ——,

  • Dust, mold, pollen, foods and chemicals certainly can cause much more than cause asthma and hay fever. As you all know allergies can take on many forms and often affects how children feel, act, behave, walk, talk, write, draw, and especially learn. Many different areas of the brain can be affected.
  • There is no doubt that it is possible to raise academic performance and attendance, while lowering infection, allergies, hyperactivity, behavior problems and drop outs. This can all be done while the expenditures of the schools are being reduced. This is a win/win for students, teachers.
  • As many know, when children can’t or won’t learn, there is a tendency to blame the teachers or mothers or the children for being “inadequate, dumb, bad and lazy.” Actually the answer could simply be a missed diagnosis of allergy. If the schools would recognize and attempt to reduce the major environmental allergens interfering with student performance, we could really do a vast amount of good.

What Can We Do To Educate Those In Power To Make Changes?

  • If we could figure out some way to encourage Mrs. Michelle Obama, with my DVD entitled Environmentally Sick Schools (ESS), to spearhead the message, she could absolutely change the future of a vast numbers of children, all over the world. The ESS DVD shows how affected children look, write, act, behave, and has specific examples of children of various ages reacting to dust, mold, pollen, foods and chemicals. Some suggestions are as simple as asking all children to write before and after each class, or lunch, at school. If the writing changes, what exposure caused the change? Some answers are that simple. I have already sent Mrs. Obama the ESS DVD and my books without any response.

I have many testimonials of children successes; one boy was told he could not get through grammar school, and he went to college! Another had an IQ of 57 that rose to over 125 after her allergies were found and treated, and she completed college. I have prayed and thought about it and finally decided to see if everyone on my mailing list would write a letter, come up with other ideas, and send the above information to everyone on their personal mailing lists, we might be able to move some mountains and get the information out. My web site is too small to do much and Facebook is really not a place to get information of this type out.

  • I will also try to send the ESS tape and my book “The Impossible Child at School and Home” to the Commissioners of Education of all the states, if it is not too costly.
  • I cannot afford to send the DVD and book to all if you, but if you pay for postage and mailing, I can have the DVD’s made and I’ll also send you the book, until the books are all gone. Just E- mail me that you want the DVD and I will arrange it. I can E-mail you a PowerPoint Presentation, with DVD’s inserted showing writing changes and the effects of dust, mold, pollen, foods, and chemicals, however, if the videos will transfer to your operating system.

When I look at all the proof I have that absolutely documents that allergies are a big piece of the present day education problem, I feel immensely discouraged. Since 1975, when I learned about Provocation/Neutralization allergy testing and treatment, I have videotaped thousands of children and absolutely can show how common allergens, including foods and chemicals, can adversely affect how children feel and learn. If I asked 1000 doctors, mothers or teachers, however, I doubt if any would be aware of the immense role allergies plays in a the chances of children being able to reach their full academic or physical potential.

Allergies are typically due to foods, dust, mold, pollen, and chemicals. Here is how fast and easy it can sometimes be to resolve some children’s problems.
