Couple a days ago I made a batch of basmati and wild rice with chicken broth. I had that with grilled marinated chicken and fresh steamed summer green beans from the farmer’s market.
Yum!
Today I took the leftover rice and made a cold dish. Basically it was whatever I had in the fridge tossed with my homemade balsamic.
I added those steamed green beans, cucumber from a friends garden, shredded carrot, baby spinach, garden parsley, sunflower seeds, feta cheese, and cubed smoked turkey ham steak.
It made enough for four.
I probably could have eaten it all.
Sometimes I forget to make summery things. Maybe because it’s only been hot here just a few days this summer. Or maybe it’s because it’s been a bit topsy turvey around here
I also forget how delicious it is!
