Vegetable Side Dish – Green Beans with Bacon and Vinegar

My chiropractor and I always share recipes.  

She was sharing her love of vegetable side dishes yet expressing how tired she gets of cooking them the same way all the time! 

I couldn’t agree more

This recipe, something she made for a holiday meal,  sounded just wonderful. 

Tonight I tried it.

Cook 6 strips of bacon until crumbly.  I used a turkey bacon.  Stem 1 lb of fresh green beans. Steam for 12 minutes and toss them in an ice water bath.  

Heat some olive oil, add the green beans, toss. Add 1/3 cup vinegar. She suggested a mild vinegar like apple cider or red wine. I used a sherry vinegar which was full flavored and perhaps a tad too strong.  Simmer for 3 minutes or until green beans are hot , add the crumbled bacon and serve

Positively delicious!
