Bless me father for I have sinned. I ate TWO BLT sandwiches this evening. This is the first of my tomato confesssions. I admit to being a repeat offender.
When my very first slicing tomato ripened I called my friend and author Pat Martin and said OK I’m throwing some bacon in the pan – you’re invited.
Happiness is the spontanaety of a good friend
Since then, my BLT fixins have been waiting for the next ripe slicing tomato. For the next tomato adventure.
My mom made a big deal out of BLT’s. I think that is where the ceremony comes from for me
Great ingredients make a super BLT
I used a 12 grain sourdough tonight. Toasted.
A bit of safflower mayo.
I used a reduced salt nitrate free bacon, turkey bacon works in a pinch and for the vegetarians try throwing a piece of provolone in a dry pan, cook until it’s bubbly and dry – tastes like bacon!
I sliced the tomato extra thin, topped with fresh cracked black pepper and sea salt
I stacked baby spinach leaves for my greens, red leaf lettuce is sublime too!
Oh my gosh. Summer Delicious!

Absolutely delicious looking picture you have there! Now I’m craving a BLT!
summer-licious…can’t improve on this one. would be sacrilegious to try.i had to come to America to discover the BLT, and this with 12 grain sour dough, safflower mayo. miam-miam, french for mmmgood!happy tomating!
