Cheese Dunk

I have absolutely no idea where this Cheese Dunk recipe comes from.

It is on a worn baby blue index card that was buried in my large square tin of eclectic recipes that I seemingly always forget I have. 

I went to a little local social gig at a glorious arty, home decor and exquisite clothing store in town called Veni Vidi Val. Pat Martin graciously invited me. I had been in the shop a few times before and felt uncomfortable. Pricey. I just can’t be a patron here – I decided. Out of my league.  Have to thank Pat for reminding me that if I want to play in the league I have to be willing to get into the game, stepping into the store was a great start. Meeting the owner really shifted why I’d go in again and again – she’s just an absolute sweetheart.

About 20 or so woman were there and Val the owner had everyone go around the room and share what it is that they do, and if they had an immediate need for something to shout it out, maybe someone in the room could be of assistance. This group of woman ooooh and ahhhhed each other like we were opening gifts at a baby shower or something, very receptive, sharing and an interesting group of woman. I had the best time.

I brought along this dip as it was a bring something affair.  I particularly like this because it’s really awesome with a red wine, and zippier than what most folks bring along. Its base is of all things cottage cheese so you can almost say its lower in calorie. It presents well.

Take a carton of low fat cottage cheese and drain. ( farmers cheese works also and saves you the draining part) add 1/2 c shredded cheddar, 1 oz of crumbled blue ( I used an amish gorgonzola), 1 T of mayonaise, 1 teas of mustard, 1 T of horseradish, salt, white pepper and green onion chopped fine. This is exceptional with apple and pear slices or a hearty cracker and as mentioned before a deep red wine.
