Leftover Hollandaise

Short post.

When I made eggs benedict I had quite a bit of leftover hollandaise. Well not a ton, but enough to say this is not going down the drain. I put it in a glass jar and wondered what the heck to with it.  It’s certainly not something on my weightloss program. Having it once was bad enough!

I also didn’t know how long hollandaise would keep? Will it seperate? It held up in it’s jar quite beautifully.

I also had 1/2 a leftover potato. Do you try and utilize your leftovers? I actually do.

So tonight I made homestyle hashbrowns ( saute finely chopped sweet onion in olive oil until translucent, add cubed potato and brown. Top with fresh ground black pepper and a bit of sea salt. )

and Steamed Organic Broccoli with of all things —–  leftover hollandaise.

We split a raw orange pepper too. 

Yum. 

See if these places jog your Chicago restraunt memory lane – late 80′s and a few of the restraunts I worked at, None of which are around anymore, but all seemingly used a lot of hollandaise – perhaps it was trendy then? Funny how I just thought of that!

Don’s Fishmarket ( of strang management – exquisite place, one still in Skokie although the site is dead )

Saratoga (swear this was a drug front establishment)

Gentleman Jim’s, affiliated with the same place that was famous for the Motherload hamburger – what was that called?

City Tavern ( Levy owned – formerly across from the Schubert )

Medici on Surf ( still one in Hyde Park)
