Twas a day like today actually – exactly. COLD, but bright. Warm from the sun but mitten weather. My son and I went to the park that day and it struck me then. This is it. It’s the last time I will have you all to my self. We are going to be invaded. I didn’t mean to think of it like that but this pregnancy was tough and my marriage was not in a good place. I was depleted nutritionally and rather emotional. I didn’t even know how how emotional I truly was at the time. We walked – my son and I – mitten to mitten home from the park and had a grill cheese lunch – he was 4 and I could eat him up with a spoon I loved him so much. I had completely and insanely nested in a holiday way and had the tree up/decorated, the cards done – ready for baby has arrived – insert, I had all the gifts shopped for and wrapped. I had cooked and frozen meals.
I had befriended my midwife – long story how that happened, but I got passed around a bit and lost my ob/gyn to an insurance stupidity. I gained a wonderful midwife who nursed me – literally held my hand during a horrid 1st trimester, only to have her leave the state to follow the man of her dreams. Her best friend became my midwife. We had a ” date “ to attend the holiday open house at lill street galleries. I had always wanted to go – she too, we planned it - this was the day we were going.
Husband arrived home after work, dinner was waiting for him, I got in the shower. I kept wetting my underpants once I got out. NEVER occurred to me that my water broke – until the pains started. Yikes. Called Melissa and she said, ”talk to me darlin – yup your moving along.” She was right because things started speeding up. “Guess were not going out tonight, eh?” ( Want to hear something funny ? I never did get to those galleries. Lill Street is known for it’s ceramics!)
One never really exactly plans for the day or moment one gives birth – first delivery was classic text book, lovely and calm. This one was as she said totally movin’
We had to drive into the city, drop off my son and then get to the hospital.
Not like a kid really gets the urgency.
I remember saying to my husband – you are going to drive fast aren’t you?
The baby dropped into the birth canal while my son was being dropped off – my sister comes out to the car like it’s a tea party – darlin I’ve got a bowling ball between my legs.
The hospital we went to wasn’t loop chicago, but it was city – no convenient parking – they have this nifty feature – seperate maternity entrance and special elevator – like the bat cave or something – waddle me in – push the button – straight to the pregnancy ward.The rest is quite the blur

I am amazed to this day how different each child is — this lively brand new baby girl latched onto my breast STARVED – she took what she needed purposefully and rather energetically and then seemingly was like OK what’s next ? As if she had things to do and places to go. This is my daughter to this very day
I really wanted to name her Rachel Ann. Yet my mother in law knew a Rachel once with green teeth, she would never call my child by that name if I named her Rachel. ( do you find that hysterically funny like I do? ) So the alternative name was Kate Lyn. However preposterous it was that my mother in law would try to influence the naming of MY child – the truth is ….Kate was a Kate the moment she was born.
Happy Happy Birthday darling. I simply adore you.

Pumpkin Cake
Today I baked what could be defined as our family favorite. It’s a recipe by all definition and from my perspective totally not healthy. Pre-made Cake Mix, Canned Pie Mix, white flour, food dye’s, hydrogenated whatever. The alternative food queen’s nightmare. However the once a year that I make it is probably OK in comparison to so many who eat this way every day.
I suck at baking. There are those who bake and I am not one. I have tried. Oh have I tried. Famous flubs include broiling the martha stewart perfect looking 6 million dollar pie – yup – killed that. To missing ingredients in all kinds of recipe to the infamous salt instead of sugar recipe flub – uh – huh!! I’m a walking baking disastor. However this recipe is not rocket science and I can make it successfully each and every time plus it’s positively and suprisingly delicious.
Not being a pumpkin pie eater – or as we referred to it as icky baby poo pie – my ex mother in law made this one year and it’s been at the Thanksgiving table ever since. All Kudo’s go to her – Thanks Vi!
Since this is also around my Kate’s birthday she often requests it.
It’s 3 layers with a small list of simple ingredients – the Libby’s Brown Label Pie Mix is typically only around the stores at Thanksgiving so if you make it soon and find you like it – keep a stash can in the pantry.
I pkg yellow cake mix Duncan HinesI can brown label Libby’s Pumpkin Pie mix – this has all the sugar etc added
3 eggs
1 stick butter
1 tsp cinnamon
2/3 cup milkMelt 1/4 C of Butter
Set aside the other 1/4 to softenGrease a glass 9×13 pan – using the wrapping of the butter
Make Crust:
Cake mix less one cup ( reserve that for topping)
1 egg and 1/4 C melted butterCombine and press into buttered pan – trick: lay wax paper over and press firmly – me telling you baking tricks it really rather funny
Make Filling:
Can of pumpkin pie mix, 2 eggs and 2/3 milk – mix together and pour over crustMake Topping:
1 cup reserved cake mix, 1 teas of cinnamon, the softened butter – use pastry blender mix together until crumbly and spoon over filling
Bake for a solid 45 minutes or until knife comes out clean.
MUST MUST serve with fresh whipped cream – add powdered sugar to sweeten. I make this the day before I intend to serve it. Cool it out of the oven and then refridgerate for better serving/cutting ease the next day.

Holiday Lights and Being Green
I live in a wonderful old victorian train town – 125 plus years old. My old town is loaded with the charm of old that I treasure. Which is probably why I live here! In recent weeks the town has become bedazzled with little italian white lights everywhere. 10 blocks everywhere – every tree, every lamp post and many of the store fronts too are a twinkly. I truly adore the bling and sparkliness of it all, but can’t help but wonder-would reducing the light wrapping to let’s say every other tree, and every other lamp post,would that be enough to make a difference for the environment and still provide holiday twinkle?
Don’t get me wrong – I love the lights and the magic of it all, I love when we have the local holiday walk and thousands gather in the square and sing and await Santa. I adore the fact that I can go visit my fellow business men and woman the eve of the walk and have it feel just like one big happy family. I love that my daughter sings for the event and has for the last 5 years, I love especially if it snows a big white fluffy snow – like the first snow we recently had
I just wonder …could we reduce the lights a bit, be a little green-er about the whole thing and still have that holiday lights bling we all love ?
Perhaps it would save the town some spending money too?

Fast and Easy Menu Planning
It’s back to the real world after holiday indulgances and a deliciously long weekend.
Yesterday I created the weeks plan for food, appointments,activities and today – my typical out of the house day – was very full. In addition to month end for my nutrition work, deadlines for my freelance work, it’s also my daughter’s birthday this Friday. We have guests coming and a special evening planned. We are all rather excited!
I had a business networking early meeting, shopped at several stores today for specialty food items, had a much needed visit with my chiropractor and just now at 8 PM sat down to do a little writing.
Dinners this week are geared towards fast and easy – every night is either play oriented ( Kate is assistant directing the January Play) or Junior Madrigal related with many performances this month and some beginning this weekend. Veggies will be tucked in to things or eaten raw and grazey.
Tonight I stuffed ground beef with fresh spinach, parsley and green onion. grilled them and topped with a sliced provolone. Delicious. Oooh and we had sliced thin tomato rounds from the garden
Fasty and Easy Menu ideas this week include:
Tuna and Pasta with shredded carrot, squash and broccoli
Chicken Sausages with green beans and smashed rhutabega
*Roasted Squash Rissoto
Pasta sauce for Kate’s Birthday – making that tomorrow morning
*Yellow Split Pea for the weekend*these take longer to make
truth is I am not sure how this will all pan out – ever get too eager in your planning?Man I feel really tired today.

Turkey Leftovers
The advantage of having someone else do the cooking on Thanksgiving is pretty obvious – can you say relaxing?? That it was. At the same time it does not offer the bounty of turkey leftovers. My wonderful friend who prepared an astounding feast this year did give me a small treasure trove container of white and dark meat for sandwiches of which I ate one of each day until it was gone.
The ultimate use of leftover turkey for me is the sandwich.
The perfect turkey sandwich includes the meat (duh), an astounding whole grain bread (toasted please), mayonnaise – I prefer safflower and tender red leaf lettuce (nothing else will do) I add fresh ground black pepper and if I am feeling positively ridiculous I will add sliced cheese. Oh my Gosh. Leftover turkey sandwich heaven.
I used to work at a very cool restaurant on the North side of Chicago. One their menu items was fresh roasted turkey sandwich served on fresh black bread with Romaine Lettuce – it was delicious and very homespun for a happening city place. Because I worked there I could indulge often. This place had a very eclectic menu and crowd. I was pregnant while working there and used to crave those darn turkey sandwiches. Lots and lots of stories from those years and that restaurant.
If I had a turkey bounty to contend with I have 2 favorites that I love to make. One is turkey fried rice which you have heard me mention before and the other is a good old fashioned Turkey Hash.
For hash you take raw potato, cube it and par boil – meaning cook the potato until its soft. Drain add diced sweet onion and cubed turkey. I brown it in olive oil patiently waiting ( hard for me) until it actually browns, then turning over and adding a touch of butter for flavor and brown the other side. I do all this in one cast iron skillet. In a separate skillet I cook eggs over easy and top the hash with the eggs, serve with steamed broccoli.
My mom never made anything with leftover turkey because we were all such turkey sandwich hounds. With 6 of us there never seemed to be many. As a child I felt turkey sandwich deprived.
My first ex’s mom used to make these things – turkey croquettes, that are somewhat indescribable. What can I say her motto in cooking had to do with have some fat with your fat and pass the fat please. Don’t go there is all I can say. Say NO to turkey croquettes
My second ex made this carcass soup I found really gross. I would also put it in the indescribable category. Because of that I am hesitant to do anything with the carcass. Unless you of course can convince me otherwise.
